Equipment
- 13 x 9 Greased Baking Dish
Ingredients
- 1 1/2 cups Granulated sugar
- 1/2 Cup Margarine
- 2 ea Egg - large
- 1 tsp Vanilla extract
- 2 cups All-purpose flour
- 1/2 tsp Cinnamon
- 1 tsp Baking soda
- 2 tsp Cocoa powder
- 2 1/4 cups Zucchini - shredded
- 1 cup Semisweet chocolate chips
Instructions
- In a large bowl, cream together the sugar and margarine until light and fluffy
- Add the eggs and vanilla and mix well.
- Add remaining ingredients, except chocolate chips, with the shredded zucchini going in last. Give it a good stir to mix evenly.
- Preheat the oven to 350ºF
- Spread the mixture evenly into the prepared baking dish
- Sprinkle with the cup of chocolate chips and a tablespoon of sugar. (Turbinado works well)
- Bake for 25 to 30 minutes.
