24 Slices French breadCut on diagonal about 1/4 to 1/3 thick

12 Oz Shrimp cookedChop into small pieces

1/3 Cup Mayonnaise

2 Tbsp Tarragon - freshChopped

1 Tbsp Lemon juice

Directions
Crostini is our go-to appetizer or even a quick lunch. Frequently we will top with traditional flavors such as Basil pesto with Prosciutto and a Balsamic glaze but here is crostini with the simplest of shrimp salad topping.
Slice a loaf of your favorite French bread or a fresh baguette to a little over 1/4 inch thick, brush with a little Olive oil and toast under the broiler or bake in the oven until gold then add your favorite topping. We have, in recent years become big fans of Balsamic glaze Which is now available in many flavors

Turn a broiler on Low. Place the bread slices on a large cookie sheet. Brush the slices with olive oil on both sides. Broil until the top begins to brown nicely. Watch closely so they do not burn. Flip the slice over and broil for just a couple of minutes until golden. Set to one side. |

For the shrimp salad, simply mix the remaining ingredients in a medium bowl. Put a heaped tablespoon of the shrimp salad on each slice, season with salt and pepper, garnish with a small parsley leaf (optional), and serve. |
