Best Zucchini Brownies

Ingredients

  • 1 1/2 cups Granulated sugar
  • 1/2 Cup Margarine
  • 2 ea Egg - large
  • 1 tsp Vanilla extract
  • 2 cups All-purpose flour
  • 1/2 tsp Cinnamon
  • 1 tsp Baking soda
  • 2 tsp Cocoa powder
  • 2 1/4 cups Zucchini - shredded
  • 1 cup Semisweet chocolate chips

Instructions

  • In a large bowl, cream together the sugar and margarine until light and fluffy
  • Add the eggs and vanilla and mix well.
  • Add remaining ingredients, except chocolate chips, with the shredded zucchini going in last. Give it a good stir to mix evenly.
  • Preheat the oven to 350ºF
  • Spread the mixture evenly into the prepared baking dish
  • Sprinkle with the cup of chocolate chips and a tablespoon of sugar. (Turbinado works well)
  • Bake for 25 to 30 minutes.
