4 oz Butter unsalted

1 lb Chicken Livers

1 ea Yellow Onions

3 ea Shallots

1/2 tsp Thyme - dried

1/2 tsp Rosemary - dried

1 ea Bay leaf

8 oz Cremini mushrooms

1/4 cup Brandy

1/2 tsp Salt

1/2 tsp Black pepper

Chop the yellow onion fine. Chop the shallots finely also. In a large skillet, melt the butter. |

Add the chicken livers, onion and shallots nd cook over medium heat for 10 minutes to soften. |

Add the spices and the mushrooms. Cook for a further 5 minutes stirring occasionally. Discard the bay leaf. |

Transfer the mixture to a food processor or blender. Add in the salt, pepper and the brandy and blend until creamy and smooth. |

Pour into a 2 cup table ready dish to chill. Serve garnished with fresh parsley and melba toast rounds or your favorite crackers. |
