Shrimp Salad Crostini with Tarragon

    Crostini is our go-to appetizer or even a quick lunch. Frequently we will top with traditional flavors such as Basil pesto with Prosciutto and a Balsamic glaze but here is crostini with the simplest of shrimp salad topping.

    Shrimp Salad Crostini with Tarragon

    Ingredients

    • 24 Slices French bread
    • 2 tbsp Extra virgin olive oil
    • 12 oz Shrimp - cooked
    • 1/3 cup Mayonnaise
    • 2 tbsp Fresh tarragon - finely chopped
    • 1 tbsp Lemon juice
    • Salt and Pepper to taste
    • Fresh parsley

    Instructions

    • Turn a broiler on Low. Place the bread slices on a large cookie sheet. Brush the slices with olive oil on both sides. Broil until the top begins to brown nicely. Watch closely so they do not burn. Flip the slice over and broil for just a couple of minutes until golden. Set to one side.
    • For the shrimp salad, simply mix the remaining ingredients in a medium bowl. Put a heaped tablespoon of the shrimp salad on each slice, season with salt and pepper, garnish with a small parsley leaf (optional), and serve.
