Preheat oven to 350F. Lightly grease and flour 2 8 inch loaf tins.
In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt then stir in the chopped walnuts.
In a separate bowl, mix the beaten eggs, oil, banana, vanilla essence and crushed pineapple, Stir well to combine the oil well with the other ingredients.
Add the wet ingredients with the flour mixture and stir until evenly moistened throughout then pour into the loaf tins in equal portions.
Bake for 50 to 55 minutes or until a toothpick in the center comes out clean. Cool for 10 minutes in the loaf tins before removing to finish cooling on a rack.
