Banana Nut Pineapple Bread

Ingredients
  

  • 3 cups All-purpose flour
  • 2 cups Granulated sugar
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 3/4 tsp Salt
  • 1 cup Chopped walnuts
  • 3 ea Eggs – large beaten
  • 1 cup Canola oil
  • 2 cups Banana – ripe mashed
  • 2 tsp Vanilla extract
  • 8 oz Crushed pineapple

Instructions
 

  • Preheat oven to 350F. Lightly grease and flour 2 8 inch loaf tins.
  • In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt then stir in the chopped walnuts.
  • In a separate bowl, mix the beaten eggs, oil, banana, vanilla essence and crushed pineapple, Stir well to combine the oil well with the other ingredients.
  • Add the wet ingredients with the flour mixture and stir until evenly moistened throughout then pour into the loaf tins in equal portions.
  • Bake for 50 to 55 minutes or until a toothpick in the center comes out clean. Cool for 10 minutes in the loaf tins before removing to finish cooling on a rack.
