French onion mini phyllo cups
Ingredients
- 2 tbsp Butter
- 1 1/2 cups Yellow onion – diced
- 3/4 cup Button Mushroom – chopped
- 2 tbsp Kalamata olives coarse chopped
- 1/3 cup Roasted red peppers chopped
- 1/4 tsp Salt
- 2 pckt Mini phyllo shells (15)
- 2-3 tbsp Butter unsalted
- 1/2 cup Boursin cheese with garlic and herbs
- 30 ea Black olives – pitted and halved
Instructions
- Heat the oven to 350ºF
- Melt the butter in a medium sized skillet.Add the onions and cook over medium heat for about 7 to 10 minutes, until golden and caramelized.
- Add the remaining ingredients for the filling and continue cooking until any liquid released has evaporated. Remove from the heat
- Brush the insides of the phyllo cups with a little melted butter and place on a baking sheet.
- Add a scant teaspoon of the onion mixture to each cup. Top with a teaspoon of the Boursin cheese and bake for 5 to 8 minutes.
- Garnish with a small black olive and serve warm.
