Instructions
Heat the oven to 350ºF
Melt the butter in a medium sized skillet.Add the onions and cook over medium heat for about 7 to 10 minutes, until golden and caramelized.
Add the remaining ingredients for the filling and continue cooking until any liquid released has evaporated. Remove from the heat
Brush the insides of the phyllo cups with a little melted butter and place on a baking sheet.
Add a scant teaspoon of the onion mixture to each cup. Top with a teaspoon of the Boursin cheese and bake for 5 to 8 minutes.
Garnish with a small black olive and serve warm.
