Instructions
Chop the yellow onion fine. Chop the shallots finely also. In a large skillet, melt the butter.
Add the chicken livers, onion and shallots nd cook over medium heat for 10 minutes to soften.
Add the spices and the mushrooms. Cook for a further 5 minutes stirring occasionally. Discard the bay leaf.
Transfer the mixture to a food processor or blender. Add in the salt, pepper and the brandy and blend until creamy and smooth.
Pour into a 2 cup table ready dish to chill. Serve garnished with fresh parsley and melba toast rounds or your favorite crackers.
