Colorado Pate
Ingredients
- 4 oz Butter unsalted
- 1 lb Chicken livers
- 1 ea Yellow onion
- 3 ea Shallots
- 1/2 tsp Thyme, dried
- 1 ea Bay leaf
- 8 oz Cremini mushrooms or baby bella's
- 1/4 cup Brandy
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Chop the yellow onion fine. Chop the shallots finely also. In a large skillet, melt the butter.
- Add the chicken livers, onion and shallots nd cook over medium heat for 10 minutes to soften.
- Add the spices and the mushrooms. Cook for a further 5 minutes stirring occasionally. Discard the bay leaf.
- Transfer the mixture to a food processor or blender. Add in the salt, pepper and the brandy and blend until creamy and smooth.
- Pour into a 2 cup table ready dish to chill. Serve garnished with fresh parsley and melba toast rounds or your favorite crackers.
