Colorado Pate

Ingredients
  

  • 4 oz Butter unsalted
  • 1 lb Chicken livers
  • 1 ea Yellow onion
  • 3 ea Shallots
  • 1/2 tsp Thyme, dried
  • 1 ea Bay leaf
  • 8 oz Cremini mushrooms or baby bella's
  • 1/4 cup Brandy
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

  • Chop the yellow onion fine. Chop the shallots finely also. In a large skillet, melt the butter.
  • Add the chicken livers, onion and shallots nd cook over medium heat for 10 minutes to soften.
  • Add the spices and the mushrooms. Cook for a further 5 minutes stirring occasionally. Discard the bay leaf.
  • Transfer the mixture to a food processor or blender. Add in the salt, pepper and the brandy and blend until creamy and smooth.
  • Pour into a 2 cup table ready dish to chill. Serve garnished with fresh parsley and melba toast rounds or your favorite crackers.
