    Ingredients

    • 8 oz Dates - chopped
    • 1 tsp Vanilla extract
    • 4 fl oz Water
    • 1 tsp Baking soda
    • 6 oz Granulated sugar
    • 4 oz All-purpose flour
    • 1 tsp Baking powder
    • 4 oz Rolled oats
    • 4 oz Butter unsalted

    Instructions

    • Preheat the oven to 325F. Line a 8" square tin or casserole.
    • Chop the dates into small pieces and place in a small saucepan with the 4 oz water. Bring to a boil and cook until soft. Stir in the vanilla and set aside to cool.
    • Sift the flour with the baking powder and baking soda. Stir in the sugar and the oats. Lightly rub in the butter.
    • Press half of the crumble mixture into the bottom of the tin. Spread the dates over the top being careful not to disturb the bottom layer. Cover with the ramining crumble mixture and press down firmly.
    • Bake for 25 to 30 mintues until golden brown.
    • Remove from the oven and mark into 9 pieces while still warm. Leave to cool before slicing and serving.
