    Mediterranean Sauteed Shrimp

    Ingredients

    • 1/2 tbsp Extra virgin olive oil
    • 8 oz Shrimp shelled and deveined
    • Salt and Pepper to taste
    • 1/4 tsp Chilli flakes
    • 1/2 Onion, medium - thinly sliced
    • 1 ea Bell pepper - sliced
    • 1 cup Diced tomatoes
    • 1/2 tsp Dried oregano
    • 1 ea Garlic cloves, minced
    • 1/8 cup Dry white wine
    • 1/4 cup Feta Cheese - crumbled
    • Basil to garnish

    Instructions

    • Pre heat a large deep skillet to medium high heat. Pat the shrimp dry with kitchen paper and season with salt and pepper to taste.
    • Add the olive oil to the skillet then add the shrimp in a single layer. Cookm until the shrimp are pink, about 3 minutes per side. Remove from the skillet and set aside.
    • Add the onion, pepper and garlic to the skillet and season with the salt and pepper. Saute until the peppers and onion are tender and beginning to caramelize, about 7 minutes. Stir from time to time.
    • Return the shrimp to the skillet then, add the white wine. Degalze the bottom of the skillet with a woodspoon and heat fro about 1 minute to burn off the alcohol.
    • Stir in the tomatoe, oregano and chili flakes. Saute for a further 2 minutes. Sprinkle with feta and basil as you serve it up.
