Directions
A quick and easy dinner for 2 ready in less than 30 minutes.
Servings: 2 people
Ingredients
- 1/2 tbsp Extra virgin olive oil
- 8 oz Shrimp shelled and deveined
- Salt and Pepper to taste
- 1/4 tsp Chilli flakes
- 1/2 Onion, medium - thinly sliced
- 1 ea Bell pepper - sliced
- 1 cup Diced tomatoes
- 1/2 tsp Dried oregano
- 1 ea Garlic cloves, minced
- 1/8 cup Dry white wine
- 1/4 cup Feta Cheese - crumbled
- Basil to garnish
Instructions
- Pre heat a large deep skillet to medium high heat. Pat the shrimp dry with kitchen paper and season with salt and pepper to taste.
- Add the olive oil to the skillet then add the shrimp in a single layer. Cookm until the shrimp are pink, about 3 minutes per side. Remove from the skillet and set aside.
- Add the onion, pepper and garlic to the skillet and season with the salt and pepper. Saute until the peppers and onion are tender and beginning to caramelize, about 7 minutes. Stir from time to time.
- Return the shrimp to the skillet then, add the white wine. Degalze the bottom of the skillet with a woodspoon and heat fro about 1 minute to burn off the alcohol.
- Stir in the tomatoe, oregano and chili flakes. Saute for a further 2 minutes. Sprinkle with feta and basil as you serve it up.
