3 cups Flour, All purpose

3/4 tsp Salt

1 cup Walnuts - chopped

3 ea beaten Large Egg

1 cup Canola Oil

2 cups Bananas - ripe mashed

2 tsp Vanilla extract

8 oz Pineapple - crushed and unsweetened

Preheat oven to 350F. Lightly grease and flour 2 8 inch loaf tins. |

In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt then stir in the chopped walnuts. |

In a separate bowl, mix the beaten eggs, oil, banana, vanilla essence and crushed pineapple, Stir well to combine the oil well with the other ingredients. |

Add the wet ingredients with the flour mixture and stir until evenly moistened throughout then pour into the loaf tins in equal portions. |

Bake for 50 to 55 minutes or until a toothpick in the center comes out clean. Cool for 10 minutes in the loaf tins before removing to finish cooling on a rack. |
