1 1/2 cups Yellow onion - chopped

3/4 cup Button mushrooms chopped

1/3 cup Roasted red peppersChopped

2 packs Mini phyllo shells

2-3 tbsp Butter unsalted

1/2 cup Boursin with garlic and herbs

30 Olives - black pittedUse small or cut in half

Heat the oven to 350ºF |

Melt the butter in a medium sized skillet.Add the onions and cook over medium heat for about 7 to 10 minutes, until golden and caramelized. |

Add the remaining ingredients for the filling and continue cooking until any liquid released has evaporated. Remove from the heat |

Brush the insides of the phyllo cups with a little melted butter and place on a baking sheet. |

Add a scant teaspoon of the onion mixture to each cup. Top with a teaspoon of the Boursin cheese and bake for 5 to 8 minutes. |

Garnish with a small black olive and serve warm. |
