One pan salmon with roast asparagus

Ingredients
- 1 lb New potatoes
- 2 tbsp Extra virgin olive oil
- 8 Asparagus spears
- 1 cup Cherry tomatoes
- 1 tbsp Balsamic Vinegar
- 2 Salmon fillets approx 5 oz each
- 1/2 cup Basil leaves
Instructions
- Preheat oven to 425F
- Toss the potatoes in 1 tablespoon of olive oil and tip onto the sheet pan and roast for 20 minutes until just starting to color.
- Toss the asparagus with the potatoes and return to the oven for a further 15 minutes.
- Add the cherry tomatoes and the balsamic vinegar and nestle the salmon fillets among the vegatables. Drizzle with the remaining oil and cook for approx 10 to 15 minutes until the salmon is cooked.
- Sprinkle the basil leaves over the tray and serve.
