The Waldorf salad is a timeless staple, famously born in New York City’s iconic Waldorf-Astoria Hotel in the late 19th century. While the original version was a simple, elegant combination of crisp apples, fresh celery, and creamy mayonnaise, adding tender, juicy chicken transforms this classic side dish into a deeply satisfying, protein-packed main meal.
Chicken Waldorf Salad
Ingredients
- 2 ea Chicken breast, skinless and boneless
- 1 ea Celery Stick, sliced
- 1 ea Apple, chopped
- 3/4 cup Grapes, seedless and cut in half
- 3/4 cup Chopped walnuts
- 3/4 cup Mayonnaise
- 1/4 cup Sour cream
- Salt and Pepper to taste
- 1/4 Lemon, juiced
- 1 ea Buttercrunch Lettuce or similar
Instructions
- Preheat oven to 425ºF.
- Place chicken on a baking sheet and season with salt and pepper.
- Bake ifor approximately 25 m inutes or until an interior temperature of 165ºF.
- Allow chicken to cool completely and cut into bite size pieces.
- Place all the ingredients in a large bowl and combine
- To plate place a couple of large lettuce leaf in a bowl or on a plate and spoon the Waldorf salad onto the center of the lettuse.
