Quick and Easy Sour Cream Pastry

Servings 2 Pie crusts approx

Equipment

  • 1 Food processor

Ingredients
  

  • 2 sticks Butter unsalted
  • 2 cups All-purpose flour
  • 2 tsp Granulated sugar Omit if using for savory dish
  • 1 tsp Salt
  • 1/2 cup Sour cream Full fat – not light

Instructions
 

  • Get the butter sticks out of the fridge and set aside while you continue.
  • Place all the dry ingredients into the food processor and give a quick pulse to blend.
  • Cut the butter into small cubes and add to the food processor.
  • Pulse until the mixture looks like breadcrumbs.
  • Ad in the sour cream and pulse until the mixture comes together and clumps like a dough.
  • Remove the dough from the food processor and on a lightly floured work surface gently kned the dough into a smooth ball. Flatten the dough into a disc of about 6 inches. Wrap in cling film and refrigerate for an hour.
  • When ready to use the pastry, remove it from the refrigerator about 20 minutes before rolling out for your recipe. It will ake it easier to work.
