Equipment
- 1 Food processor
Ingredients
- 2 sticks Butter unsalted
- 2 cups All-purpose flour
- 2 tsp Granulated sugar Omit if using for savory dish
- 1 tsp Salt
- 1/2 cup Sour cream Full fat - not light
Instructions
- Get the butter sticks out of the fridge and set aside while you continue.
- Place all the dry ingredients into the food processor and give a quick pulse to blend.
- Cut the butter into small cubes and add to the food processor.
- Pulse until the mixture looks like breadcrumbs.
- Ad in the sour cream and pulse until the mixture comes together and clumps like a dough.
- Remove the dough from the food processor and on a lightly floured work surface gently kned the dough into a smooth ball. Flatten the dough into a disc of about 6 inches. Wrap in cling film and refrigerate for an hour.
- When ready to use the pastry, remove it from the refrigerator about 20 minutes before rolling out for your recipe. It will ake it easier to work.
