Coconut Macaroons

Ingredients
  

  • 14 oz Sweetened dessicated coconut
  • 14 oz Sweetened condensed milk
  • 1 tsp Vanilla extract
  • 2 ea Egg whiites, large
  • 3/4 tsp Kosher salt

Instructions
 

  • Preheat oven to 325ºF
  • Combine the coconut, condensed milk and the vanilla in a large bowl. The mixture will be stiff as you work the condensed milk inti the coconut.
  • Whip the egg white and salt with a mixer on high speed to the medium stiff peak stage.
  • Fold the egg whites into the coconut mixture until fully combined.
  • Line 2 large baking sheets with parchment paper. Drop the batter onto the paper using either 2 teaspoons or a 1 3/4 inch ice cream scoop.
  • Bake for 25 to 30 minutes until golden brown. Baking one tray at a time will help get uniform golden brown tops. Cool and serve.
