
Kale Salad with Creamy Lemon Parmesan Dressing
Ingredients
- 4 cups Curly kale – stems removed
- Sea salt to taste
- 1/2 cup Dried Cranberries
- 1/2 cup Slivered almonds
- 1/2 cup Grated parmesan cheese
- 2 tbsp Mayonnaise
- 2 tbsp Yogurt
- 2 tbsp Lemon juice
- 1 tbsp Extra virgin olive oil
- 1-2 tsp Red wine vinegar
Instructions
- Place the kale in a large bowl with a generous pinch of sea salt. Massage the salt into the kale until the kale softens and has turned a darker green. Same as yu would rubbing shortening into flour to make pastry. Add the dired cranberries and sliced almonds. Set aside.
- Make the dressing by combining the parmesan, mayonnaise, yogurt, lemon juice, olive oil, the red wine vinegar qand black pepper. Check for taste before stirring into the kale just prior to serving.
