Ingredients
- 14 oz Sweetened dessicated coconut
- 14 oz Sweetened condensed milk
- 1 tsp Vanilla extract
- 2 ea Egg whiites, large
- 3/4 tsp Kosher salt
Instructions
- Preheat oven to 325ºF
- Combine the coconut, condensed milk and the vanilla in a large bowl. The mixture will be stiff as you work the condensed milk inti the coconut.
- Whip the egg white and salt with a mixer on high speed to the medium stiff peak stage.
- Fold the egg whites into the coconut mixture until fully combined.
- Line 2 large baking sheets with parchment paper. Drop the batter onto the paper using either 2 teaspoons or a 1 3/4 inch ice cream scoop.
- Bake for 25 to 30 minutes until golden brown. Baking one tray at a time will help get uniform golden brown tops. Cool and serve.
