Classic Homemade Coleslaw

Ingredients
  

  • 1/2 ea Green Cabbage head sliced into thin strips
  • 4 ea Medium carrot – julienned
  • 1 ea Red onion – thinly sliced
  • 1/2 bnch Cilantro – leaves finely chopped
  • 1 tbsp Dijon mustard
  • 50 g Mayonnaise
  • 50 g Greek yogurt
  • 2 tbsp White wine vinegar
  • 2 pn Paprika

Instructions
 

  • Remove any damages outer leaves. Cut out the core then slice as thinly as possible. Place in a large bowl.
  • Add the julienned carrots and thinly sliced red onion to the bowl.
  • Add the chopped cilantro to the bowl and toss lightly.
  • In a jug, mix together the mayonnaise, yogurt, white wine vinegar and season lightly.
  • Add the dressing to the bowl and toss well until everything is nicely coated. Sprinkle with the paprika and serve.
