Herbed Couscous Pilaf with Golden Raisins and Pine Nuts

Ingredients

Adjust Servings:
3/4 cup Chicken stock
1/2 tbsp Olive oil, Extra virgin
1/2 cup Couscous
For the Dressing
1/2 tbsp Lemon juice
1 tbsp Olive oil
Salt and Pepper
2 tbsp chopped Parsley - fresh
2 tbsp Golden raisins
1 tbsp Pine nuts toasted
1 clove Garlic - minced
1 ea Shallots Chopped fine

Herbed Couscous Pilaf with Golden Raisins and Pine Nuts

      This has to be the most moist and flavorful couscous dish ever. This is similar to the recipe by Jamie Deen on FoodNetwork, however, here I have substituted chicken stock for the water in his herbed couscous recipe.

      In a small sauce pan heat the olive oil and cook the garlic and shallot until just soft, 1-2 minutes.

      Add the chicken stock and bring to a boil. Stir in the couscous. Cover and remove from the heat. Let stand for 3 minutes. Uncover and fluff with a fork.

      Whisk together the lemon juice, extra-virgin olive oil and some salt and pepper. Pour the dressing over the couscous and toss with the parsley, raisins, and pine nuts. Serve warm or at room temperature.
